Sometimes you can learn everything you need to know about a business by asking a single question.

For instance, at a barbecue shack, an affirmative answer to the question “Y’all got sweet tea?” is a sure sign that the pitmaster knows how to handle a rack of ribs. If a taqueria has the correct answer to the question “Do you have goat tacos?” (the correct answer is “yes”), you know you’re in good hands.

And at a meat market, “Do you carry snoot?” provides a similar level of insight.

Perry’s also sells just about every other kind of meat you could possibly want, including big, tasty pork shoulders, which we like to cover in dry rub and slow-smoke for several hours before serving with a little hint of Memphis-style barbecue sauce.

Although it’s primarily known as a meat market, Perry’s also offers a few frozen foods, some produce (including wonderfully fresh mushrooms), a good selection of local barbecue sauces and rubs, several kinds of Cajun rice mixes, Jamaican jerk seasoning, cold drinks (including Jones soda), and just about everything else you’d need to put together a decent meal.

The prices are very reasonable, and the service is good, although you might have to wait in line at the meat counter if you show up after 5 p.m., when the between-work-and-dinner crowd starts coming in.

Perry’s is located on Lewis Avenue, just north of 11th Street. Hours are 9 a.m. to 6:30 p.m. Monday through Saturday and 11 a.m. to 6 p.m. Sunday.

  3. Pig snout. You barbecue it ’til it’s crispy and serve it with barbecue sauce. Tastes like an assertive pork rind.
